Ingredients:
- 500 g of cod
- 8 potatoes
- 2 eggs
- 2 tablespoons olive oil
- 1 large onion
- 2 cloves garlic
- Parsley
- Pepper
Instructions:
- Remove the bones from the fish.
- In a frying pan, sauté the onion and garlic with olive oil.
- Add the fish and sauté for 5 minutes.
- Cut the potatoes into french fries. Precook them in boiling water for about 5 mins, keeping them firm.
- Add the french fries to the pan and sauté. Leave on the heat for about 5 minutes.
- In a bowl, beat the eggs and season with pepper. Add them to the pan.
- Heat for a few minutes while stirring, the eggs should not be fully cooked.
- Sprinkle with chopped parsley and serve immediately.
