Caldo verde (cabbage soup)

Ingredients:
- 2 L water
- 500 g potatoes
- 1 onion
- 350 g green cabbage
- 2 tablespoons olive oil
- 1/2 chorizo cut into slices
Instructions:
- Bring the water to boil.
- Peel and dice the potatoes. Rinse them to remove the starch.
- Add them to a saucepan of water (about 2L).
- Peel and slice the onion. Add them to the water.
- Cook for 15 minutes and then mix.
- Wash the cabbage cut into thin strips. Add them to the mixture and cook for 10 minutes.
- Add olive oil and bring to a boil.
- Add a few slices of chorizo and serve.
