Ingredients:

  • 40 g flour
  • 40 g butter
  • 2 lemons
  • 2 eggs
  • 30 g sugar
  • 15 g flour
  • 1 teaspoon baking powder
  • 40 g almond powder
  • 50 g dried cranberries
 

Instructions:

  • Preheat the oven to 180°C.
  • Mix the flour and butter until a shortcrust dough is obtained.
  • Press the preparation into a 15 cm square pan covered with baking paper.
  • Bake for 20 minutes.
  • Lower the oven temperature to 160°C.
  • Remove the zest of the 2 lemons and squeeze the juice of one lemon.
  • Beat the eggs and sugar until frothy. While mixing, add the zest, lemon juice, flour and yeast, almond powder and cranberries.
  • Pour the mixture over the dough.
  • Bake for 40 minutes or until the top is golden brown.
  • Wait until it has cooled completely before cutting into squares.
