Pasta salad with avocado and mint sauce

Ingredients:
- 300 g wholemeal pasta
- 1 cucumber
- 200 g arugula
- 40 g roasted hazelnuts
- Salt
- 1 avocado
- 1 tablespoon olive oil
- The juice of 1 lemon
- 1 pot of soy yogurt
- 1 bunch of fresh mint
Instructions:
- Peel and stone the avocado.
- Mix it with olive oil, lemon juice, yogurt, a pinch of salt and about 10 mint leaves.
- Cook the pasta in a large volume of salted water. After cooking, rinse to stop cooking.
- Mix the pasta and avocado sauce together.
- Peel and cut the cucumber into thin slices.
- Mix with the pasta and sprinkle with toasted hazelnuts.
