  • 300 g wholemeal pasta
  • 1 cucumber
  • 200 g arugula
  • 40 g roasted hazelnuts
  • Salt
  • 1 avocado
  • 1 tablespoon olive oil
  • The juice of 1 lemon
  • 1 pot of soy yogurt
  • 1 bunch of fresh mint


  • Peel and stone the avocado.
  • Mix it with olive oil, lemon juice, yogurt, a pinch of salt and about 10 mint leaves.
  • Cook the pasta in a large volume of salted water. After cooking, rinse to stop cooking.
  • Mix the pasta and avocado sauce together.
  • Peel and cut the cucumber into thin slices.
  • Mix with the pasta and sprinkle with toasted hazelnuts.
